How to make honey garlic chicken step-by-step
Using chicken on the bone is a great way to get more flavour from this chicken recipe, but you can also achieve delicious results using chicken thighs or chicken breasts.
- Cut away any excess chicken skin or fat
- Season chicken with dry seasoning: dried thyme, paprika, salt and coat with cornflour (cornstarch)
- Sear chicken pieces in heated pan
- Mix sticky sauce using garlic, honey, dijon mustard, paprika and dried thyme
- Mix chicken in honey garlic sauce
- Bake in oven to finish
Which part of the chicken is best…chicken thighs or breasts?
If chicken on the bone is not your preferred, then you’re in luck as previously mentioned you can also use boneless chicken thighs and chicken breast. I’ve made this recipe using the other two options and there are benefits to both.
Chicken thighs can be ideal for this honey garlic recipe as dark meat in general can be super moist and flavourful without much effort, as it is so tender and absorbs the seasoning more easily. Also, another perk to using chicken thighs is its ability to not get dry despite being cooked in high heat, which you will appreciate with this honey garlic chicken recipe.
When opting for chicken breast it’s worth noting that you will need to either flatten the chicken breast with an empty wine bottle (if you have any around, like I do on a weekend) or a rolling pin to ensure the chicken breast cooks through without drying out! And finally cutting chicken breast into strips will also give you the best cooking outcome with the recipe as the chicken will cook evenly without drying.
Alternative protein or Ingredients swaps:
If you are over chicken recipes or have exhausted your taste buds with chicken then you can swap it out for other proteins such as seafood options like shrimp/prawns, red meats like lamb pork, beef or even veggie options such as tofu.
Supposing you’re not a fan of olive oil ( I mean who isn’t?) you can opt for more neutral tasting oils that can take the high temperature in this cooking such as ghee, rapeseed and sunflower.

Instructions
- Start by pre-heating oven 200C/180C Fan/Gas 6
- To prepare the chicken start by cutting away any excess chicken skin or fat from chicken thighs and drumsticks
- Wash chicken pieces under cold water and squeeze lemon juice into water to clean thoroughly
- Using a kitchen towel pat try to remove excess water
- Place chicken in a bowl and season with dried thyme, paprika, pink Himalayan salt, cornflour
- Mix well and allow to come to room temperature
- Add olive oil to a preheated pan and add the chicken pieces to sear for 3 minutes on each side until brown
- Remove chicken pieces and place on casserole dish
- Using the same pan add butter and allow to melt
- Then add garlic allow to brown before adding honey and dried thyme and paprika to the sauce
- To balance add some dijon mustard and sprinkle some all purpose seasoning
- You now add the seared chicken into the pan with the honey garlic sauce and combine until chicken is fully coated
- Place the coated chicken in the casserole/ baking dish
- Bake the chicken for 25 – 30 minutes in the pre-heated oven at 200C/180C Fan/Gas 6
- Remove after 25-30 minutes and allow to stand for 5-10 minutes before serving
- Garnish with chilli flakes and spring onions
