How to make an easy chicken and vegetable stir fry
The most important part when it comes to making this chicken stir-fry recipe is the preparation taking you around 10-15 minutes as best depending how fast you can chop everything up! Then after that it is literally a series of throwing everything in the pan and siring away until it’s all cooked to your liking – sounds easy right? Well it is! and this is what I’d recommend you do:
- Pan sear the chicken pieces in a large pan with a drizzle of olive oil for 5 minutes until you get a brown colour
- Remove chicken from wok and set aside
- In the same wok add all vegetables and stir fry 2-3 minutes
- Add cooked chicken back into the wok
- Drizzle all the desired sauces into the stir fry
- Stir fry everything together so the veggie, chicken and sauce combine fully
Tips on making a chicken stir fry successfully every-time:
This recipe is heavy on vegetables and the best tip on cooking them is simply learn which ones cook fast and which ones take a little longer to avoid have overcooked and undercooked vegetables. But also this is dependant on your preference on crunchiness etc.
Veggies that cooks fastest in a stir fry:
- sweet peppers
- mushrooms
To avoid overcooking these vegetables to to sauté them until they’re slightly tender, and have bite to them. a little trick I use if to remove them from the stir fry if the seem to be over cooking and add them at the very end – prevention better than the cure type of thing! Soft or soggy vegetables are never a good idea in a stir fry you want crunchy and texture filled!
Veggies that take longer to cook in a stir fry:
- carrots
- broccoli
To save time you can blanch the carrots and broccoli in the hot water separately for 5 minutes to get them to steamed do you can cook them after with ease. This makes a huge difference in the final outcome. The last thing you want is succulent chicken and bland raw veggies.

Ingredients:
1kg Chicken Thighs
1 Red Onion
1 White Onion
1 Large Broccoli
1 Large Carrot
3 Sweet Pepper – Red/ Green/ Yellow
350g Mushroom
2 tsp Chilli Flakes
3 Fresh Garlic
2 tbsp Fresh Ginger
2 tbsp Oyster Sauce
2 tbsp Soy Sauce
2 tbsp Sesame Oil
3 tbsp Olive Oil
1 tsp mixed herbs
1 tsp all purpose seasoning
1 tsp garlic powder
Instructions:
- Clean and chop/slice all the vegetables set aside
- Clean and dice chicken breast
- Season chicken in a mixing bowl using mixed herbs, all purpose seasoning, garlic powder. Mix well then set aside
- Pan sear the chicken pieces in a large pan with a drizzle of olive oil for 5 minutes until you get a brown colour
- Remove chicken from wok and set aside
- In the same wok add all vegetables, garlic and ginger stir fry 2-3 minutes
- Add cooked chicken back into the wok mix well until all combined
- Add a generous drizzle of all the desired sauces into the stir fry at this point you can also add chicken stock if you want a saucy stir fry
- Stir fry everything together so the veggie, chicken and sauce combine fully
- Let the chicken stir fry stand for 5 minutes then serve with a bowl of rice or potatoes
